    NeXus NetiZen Radio show Topic April 6th 2012:

    Gardening, Foraging and our relationship with our food.




    There are many aspect to this topic. We could talk for hours about Monsanto or GMO etc..

    We know our food is bad.

    So what do we do about it?

    How have you changed your habits since exposure to the "truth" about our food industry?


    This is a fabulous Photo essay, that i have posted before, about what a "typical family" from a variety of countries eat/buy/choose every week for their families.

    I see more then groceries.. I look at the faces, the furniture, the walls..

    To me, the countries I thought would be the worst off food wise.. come off as being happier and better fed.

    The amount of processed food in the 1st world countries, is astounding...

    The aspect of food that interests me the most at the moment, because it is very timely here in the Norther Hemisphere, is gardening/foraging. My parents have a raised garden that has been neglected for a couple of years and I'd like to make it productive and I have questions about it. Gardening, growing food is something that has always interested me I have just never had the land to do it. I hope Gardener comes on to pass on her expertise.

    Anyway.. Food is a big topic, one that will likely be revisited many times. I would be good to hear Janos talk about eating wild..

    I"ll be listening.

    I especially would have some questions about the moonphase gardening.

    saffron is nature's powerful anti-depressanet...it induces a sense of wellbeing and it also promotes clear complexion ...great in all rice dishes, but also in puddings and pastries....personally, i like it best in home made icecreams...

    saffron is the world’s most expensive spice because of its unique properties and because of all the labour that goes into producing it (more than 170,000 flowers make just one kilogram). it's expensive, but then it isn't as you only need a minute pinch.....before using. ideally, you should grind the pods in a spice mill with a tiny bit of sugar added to it....that way the powder preserves its aroma for longest and it won't cake while stored.

    also, and in order to get the most out of saffron it should be soaked in a little warm water for 10 minutes before being added to food at the last stage of cooking....the aroma, flavour and colour will come out much better this way... l

    Great topic! If not already on the agenda, interested in some discussion of:

    1) The impact of increasingly severe weather (floods, drought, tornadoes, etc) on food production

    2) I also assume you will touch on Monsanto -- not just the potential health impacts of GMOs, but Monsanto's monopolization of agriculture (including seeds), their coercion of farmers and their impact on reducing biodiversity.

    3) Big Ag also has a great deal of influence over legislation (especially in the US). See http://www.nytimes.com/2012/04/05/op...&smid=fb-share Yesterday' NYT article, Arsenic in Our Chicken?

    4) Permaculture is an interesting topic (in terms of localizing food production). http://en.wikipedia.org/wiki/Permaculture

    5) The demise of bees is very concerning as well (in relation to food production).

    6) The impact of plastics on our food and bodies (endocrine disruption via phthalate leaching, etc). See http://en.wikipedia.org/wiki/Phthalate

    With the cost of food going up weekly now I notice I think it would be prudent to get back to learning to cook with basics. There is a variety of recipes for basic foods that can stretch a food budget in healthy ways and help feed families in need.

    Many of the younger generation do not know how to cook other than out of packages, cans, M&M, fast foods etc and this can really eat up money budgeted for food. Knowing how to make hearty soups, stews, casseroles, goulashes, tea biscuits, etc would be key to helping those struggling these days. Heck I have even made meals out of chicken gizzards or pork hocks in tough times and they were delicious with a few spices, onions, etc.

    If there is a need here at Nexus maybe we could even start a recipe sharing thread of cheap, nutritious meals.

    I actually do eat chicken (and turkey) gizzards and love them. Bake em up nice and crispy and they are awesome. But you're right, it's handy to know how to cook more with less.

    A friend of mine showed me how to cut a chicken and seperate it into 7 meals

    Most people dont cut the chicken....costs soo much more to buy it cut.

    I love how now that we are all poor, we start doing the right thing and start healing.
    We can't afford their poison any more and so we start gardening and cooking again.
    Love the irony.
    Just like people are unemployed are waking up cause they have nothing else to do,
    so they start to ask questions.
